Blueberry Cobbler!!

Hey everyone! So this is what I made a couple nights ago….

Its a blueberry cobbler it was so good!!

Place your oven to 375*

I started by washing about 4 heaping cups of fresh or frozen blueberries place in a large bowl, Then add 1 1/2c. sugar, 1tsp. almond flavoring and 1/2c. flour.. Mix well!!

Now to make your crust I used  biscuit dough.

2c. flour
3tsp. Baking powder
1/2 tsp. salt
1/2c. butter
3/4 cup to 1 cup milk.

Mix flour baking powder and salt together in a large bowl… Cut in butter with a pastry blender then add milk!
Now take your dough and separate into two balls.. take one ball and place in bottom of your pan and roll out!

Now place your blueberry filling in bottom of pan!
Then take remaining dough and make big circles and place over blueberries!! Cover with foil and bake for 15 to 20 minuets, then remove foil and bake for 25 to 30 minuets or until crust is golden brown!

Irish Soda Bread!!

Hey every one, So I just made this for the first time! It was really pretty good! Dad doesn’t like raisins.. So I was thinking you could change it around and put cranberries in it if you don’t like raisins like my dad!! 🙂

4c. sugar                                  2c. raisins ( or cranberries)
1/4c. sugar                               1 large egg, plus 1 large egg yolk
2tsp. baking powder                1 1/2c. buttermilk
1tsp. salt                                  1tsp. baking soda
4.tbl cold butter                        1tbl. heavy cream

preheat over to 350*
In a large bowl mix flour,sugar ,baking powder,salt, Add butter and with a pastry blender,blend together! Fold in raisins!
In a small bowl mix buttermilk,egg and baking soda! Add egg mixture to flour mixture using a spatula, mix together until the dough just comes together! Place on a baking sheet and form into a domed loaf!
In a small bowl whisk together egg yoke and cream, brush over the loaf!
Place in oven and bake for about an hour or until golden brown!!

Whoopie Pies!!!

Hey everybody, so I made Whoopie Pies, they were really good, sadly I didn’t get a pic of them :(.. But here is the recipe!!

INGREDIENTS

  • 3 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 1/2 cups unsweetened cocoa powder
  • 1 tablespoon baking soda
  • 1 teaspoon baking powder
  • 1 cup (2 sticks) unsalted butter, room temperature
  • 2 cups sugar
  • 2 large eggs
  • 2 cups buttermilk, room temperature
  • 2 teaspoons pure vanilla extract

DIRECTIONS

  1. Preheat oven to 400 degrees. Sift together flour, salt, cocoa powder, baking soda, and baking powder. Set aside. In the bowl of an electric mixer fitted with the paddle attachment, cream butter and sugar until light and fluffy. Add eggs, buttermilk, and vanilla. Beat until well combined. Slowly add dry ingredients. Mix until combined.
  2. Using a 1-ounce ice cream scoop, place cookies onto lined baking pans, 12 per pan. Bake for 12 minutes. Remove to a rack to cool. Repeat with remaining batter.
  3. Spread 2 tablespoons frosting onto each of 24 cookies. Sandwich together with remaining 24 cookies.
Frosting
  • 1 cup (2 sticks) unsalted butter, room temperature
  • 2 cups sifted confectioners’ sugar
  • 2 teaspoons pure vanilla extract
  1. In the bowl of an electric mixer fitted with the paddle attachment, cream together butter and sugar until pale and fluffy, about 3 minutes. Add Fluff and vanilla and continue mixing until well combined.
They were really pretty easy to make and were really good!!

No roll sugar cookies!!

Hi everyone!!! I hope ya’ll had a merry Christmas and A blessed New Year!! These cookies are so much fun to make, and so easy!! Dad loves them, and if you are looking for  something quick and easy…Here you go!!!

 

Start  by preheating you oven to 375*

 

1c. sugar

1c. butter ( 2 sticks)

1.tsp vanilla

1/2.tsp almond extract

1 egg

2 1/3 c. Flour

1/2.tsp baking soda

 

Cream together butter,sugar. Then add almond extract, vanilla and egg, and mix! Add flour and baking soda and mix! Then shape dough by teaspoonfuls into balls, then place on an ungreased cookie sheet then flatten out your dough with fork! Place in oven

for 10 minuets or until lightly browned!!

 

Well  that’s all there is to it.. hope ya’ll  enjoyed another recipe!!

Cheese cake recipe!!!

Hey everybody, here is the recipe for the Valentines day cheesecake!!! Sorry it took me so long to get it posted 😉 We have been so busy!! Have you all been enjoying this nice weather.. we  have, the little kids have been out side playing and Dad has been really busy working out side.. I think SPRING has arrived folks!!

2.c Oreo cookies ( ground into crumbs) Mom used a gluten free oreo type cookie for ours
3 TBL butter melted

Mix together and press into a foil lined 9X 13 pan and bake at 325 for 10 minutes. Mom uses a few layers of foil to cover the bottom and sides well.

Then beat together

4  8oz. packages of  cream cheese

1c. sugar

1tsp. vanilla

Then beat in

1c. sour cream

6 squares of semisweet chocolate, melted

Then beat in 4 eggs, one at a time on low speed

Pour on top of crust and bake at 325 for 40 to 50 minutes until the top is cracked and center is almost set. Let cool on counter and then put in fridge overnight. When ready to serve top with a tub of coolwhip and a can of cherry pie filling. You can use the foil to lift out of the pan and then place the whole thing on a tray or cookie sheet if desired.

No bake cookies!!

This cookie is so simple and easy!!! I love making them  lol….. and eating them too!

2c. sugar

1/2c. milk

1/2c. butter

3tlb. milk

Combine in a saucepan. Heat to boilling stirring until dissoloved. Boil 2 minuets. Remove  from  heat. Then add

1/2c. peanut butter or almond butter 

1tsp. vanilla

3c. quick oats

Mix well. Then drop  onto waxpaper. Let cool until set firm.

Yum!! Fried Apples!!!!

Well yesterday was Azure pick up!!  And as some of you know  the pick up was at 6:30 last night. Well that just  happens to be milk time at our house, so our friends were so kind as to pick our order up for us 🙂 So Mom ordered apples, everybody was so excited so I knew once we got the apples  I just had to make fried apples, so here is what I  do to make them!!!

Start by cutting up 4 apples ( I peel my apples but you dont have to )

Then add about 1/3c. brown sugar  and 5tlb. butter then turn the heat up to about medium.   

Cook your apples until they are soft and not crunchy!! ( note you can add raisins and pecans if you would like) The butter and brown sugar makes a really good carmel coating on them.

Here is what  they look like when they are all done cooking!!!
